A Wintery Feast from the Greenmarkets

Greenmarket Bounty

Greenmarket Bounty: Squash, Root Veggies, Mushrooms, Cauliflower, Broccoli, Brussels Sprouts, Ronnybrook Milk, Apples, Tuna Salad, & Crab Cakes from the Union Square Greenmarket

Sometimes I like to come home and simply admire all the beautiful things I’ve found in the greenmarket before I put it all away. I love this photo from a couple of weeks ago after a visit to the Union Square Greenmarket. When I’m nostalgic for peach juice dripping down my elbows, this picture reminds me that there is still so much wonderful fresh produce to enjoy in the fall and winter.

James is particularly partial to the wild caught tuna fish salad from PE & DD Seafood, whereas I love their crab cakes. It feels like a personal victory when we get to the market and the crabcakes haven’t sold out yet!

We peeled and diced all the vegetables, tossed them in olive oil, salt, pepper and rosemary, and baked them in the oven at 425° F for about 45 minutes. It’s the easiest, tastiest, most nutritious meal-in-a-bowl for the season.

I hope you enjoy fall and winter in the farmers markets. Stop by the Information Tent in your local market for great seasonal recipes. Or just ask a farmer – they know best.
