Knoll Krest Farm from Dutchess County, New York is best known for its delicious, organic eggs from cage-free chickens. Once you have a farm fresh egg, you will never look at a yolk the same way again. Fresh eggs have so much more flavor, and the yolks are invariably a deeper yellow and sometimes even orange.
It stands to reason that if you have an abundance of eggs, one way to preserve them and turn them into more products is to make pasta. And that is exactly what Knoll Krest does. Their fat tagliatelli, penne, radiatori and shells come in several varieties, including whole wheat, spinach, carrot, tomato and basil, and plain of course.
The pastas cook up in just a few minutes. You can add your favorite sauces and toppings. But I prefer to eat them with just a touch of butter so I can enjoy the texture and flavors of the noodles themselves. You can find Knoll Krest’s eggs and pastas at the Union Square Greenmarket on Wednesdays and Saturdays.
